Bring on a chill with cherries

Delicious cherries are loaded with vitamins, anti-oxidants and fiber.

At present these are plentiful in our local supermarkets, gourmet food stores and farmers markets, at very low prices. The cherry season is short, so take advantage of it while you can.

This is an easy recipe to prepare and tastes so refreshing on a hot day. No cooking required!

CHILLED CHERRY SOUP

Serves 6-8

Ingredients

2 pounds chilled, fresh sweet cherries, stemmed, washed and pitted, reserving about 6-8 cherries for the garnish

4 tablespoons fresh lemon juice

2 teaspoons lemon zest (optional)

Half teaspoon ground cinnamon

Half teaspoon ground cloves

Half teaspoon salt

2 cups of sour cream or crème fraiche

Garnish cherries / Mint leaves

Preparation

Wash cherries

Remove stems and pits

Place cherries in a blender with all other ingredients

Blend at high speed

Chill in refrigerator for at least two hours.

Just before serving garnish with the reserved cherries, halved, and/or mint leaves.
